"I'm absolutely passionate about detail. That's why we cure our own salt beef - from local herds - and smoke our own salmon. It's why our chefs are in to bake fresh bread first thing every morning. We forage for wild garlic, sweet talk local farmers into selling us their best beasts and I scour the area for exciting new produce and ideas."
